All these games are complementary with each other, it is not like you play one, you play them all, you really want to enjoy all the adventures. I wish I had these back in the day. I got my Game Boy after I got my Super Nintendo, and I would have had a blast with all of these.

I'm going to play them soon so I can give my veredict, but from what I've heard, MMV is supposed to be really damn good and the most original one among them, with its own exclusive bosses.

I haven't played any of the original GB Mega Man games extensively but I would like to play atleast V at some point, like Cervantes said I've heard it has the most original content. I'm not super interested in downgraded NES ports but still might play them all eventually.
I have played the Xtreme games on GBC though.

After playing them, I think IV and V are on par with each other and III is almost up there, but I'm going with Mega Man IV. While V is the most different and the one I recommend for players of the NES series because of that, IV is also distinct enough from the NES original, has the most fun to use weapons, complex and interesting level designs, cool cutscenes and more iconic bosses, even if they aren't new. As Pimpjira, I thought IV was going to be a downgraded port, but while it has enemies and graphics from NES 4 and 5, the levels are different and the added cutscenes, new bosses and even setpieces (like having to escape an exploding fortress after fighting Ballade) set it above the others for me.
