And this trailer makes it look like a Star Fox 64, Star Fox Adventures, Metroid Prime, Shadow of the Colossus crossover:
Whatever it is, I'm intrigued by Starlink: Battle for Atlas and am adding it to my "must-buy" list once I buy a Nintendo Switch.

No. This is a crossover for their own version of Amiibos. It's a cool idea, though. You can add weapons or other extras in game with the toy provided. It looks like the Star Fox add on is just like a DLC exclusive to the Switch version of this.

Ubisoft has been having a lot of collaborations with Nintendo lately. I don't have the Rabbids game, but it looks like they are bringing Donkey Kong to that.
If that's the case, it would not surprise me to see Rayman announced for Super Smash Bros. Ultimate at some point.

I would've been excited as a kid. The real-time modifications and little ships are really cool. As certified Grown Up, though, all I see is a bunch of Extra Stuff that takes up space and collects dust.

I'm sure not all grown ups feel that way. I remember collecting a bunch of Amiibo when they started coming out, and you would be surprised how many adults were doing the same.
This one doesn't call my attention, maybe because it is a new IP, but I don't see why others that are into that kind of stuff wouldn't like it.
