This came to me yesterday as I watched gameplay of Street Fighter V, and remembered that Cammy's intro had different camera angles from the beta - I legit dislike both angles they tried - and how R. Mika had different animations before too. Don't know how those ended up. So! Lets say you are expecting the release of a product, a game or a book or movie, then you somehow find out that something about that product has changed late in development, and that particular thing was somewhat interesting to you. You most likely get bummed by that, but does it make you wish you never knew to begin with? Or are you the kind of person who would rather know everything?
As for me, I'm not sure myself, because there are situations that annoy me a little bit. Take Dead Or Alive 5, for example, did you know that Hitomi was actually supposed to look like a german girl? Due to fan demands her face was changed so that her cheeks are more bulldog-like.

I'm OK with publishers telling me that a game is being delayed for quality purposes. The delay in Zelda Wii U was welcome information after dealing with glitched out Arkham games. Quality assurance is far more important than stupid deadlines. I don't mind waiting for a complete game.
I think development information was awesome to know about in the 1990s, because limitations led to sequels or left over code that led to confusion. (The distant unused levels in GoldenEye through me for a loop.)
On the other hand, I don't really want to know about minor changes, because I will notice them once I get the game. That is quite annoying, especially when it is a censure-ship thing. When I discovered the censuring of the Final Fantasies on the Super Nintendo, I was more ticked off than anything else. I hated how the knowledge of the censuring led me to believe that the video game industry though of me as a baby. Things apparently haven't changed much.
I guess it all depends on the situation.
