As we all know the Sega Saturn is a fantastic console capable of doing stunning 2D visuals, much better than the PS1. So what are your favorites? Mine is DonPachi at the moment. Shmups are so fun to play, however they are expensive (but what Saturn games aren't already that). I wish I had the sequel DoDonPachi or some of the other awesome ones like Batsugun or Radiant Silvergun.

Oh, man. I can't believe you made this question. How the hell am I supposed to pick ONE game from the entire Saturn library???
I will pick Panzer Dragoon Zwei for now. It was the first Saturn game that really wowed me. When I got a Saturn from my father, it came with a lot of arcade-style and sports games (VF2, Virtua Cop, Daytona, Worldwide Soccer, Sega Rally) and a few 2d ones (Astal, Sonic 3d, Puzzle Bobble). It was all very good, but none of them were really, you know, big "adventures", and at the time I was really into Zelda (I wasn't too much of a fan of shorter, arcade-style games).
Then I rented PDZ, and it was the game responsible for making me much more welcome of arcade games. It was a shooter, very arcade-like, but the setting, the story, the way your dragon grows through the game, all that felt like I was playing through a grandiose adventure. Besides, it was my true introduction to 3d games: it didn't just looked like one, it played like one (unlike Virtua Cop), as enemies were coming from every direction and I had to really look around and get used to having a 3d camera.
My favourite moment is when the dragon is running towards a cliff, then jumps... and then starts flying for the first time. The music stops, you have this brief moment of quietness, the horizon looks really, really far (giving me a perfect sense of scale, as the 3d world looked vast), then the fight starts again. That game is awesome. I never minded the fact that the game was short, as the "Pandra's Box" feature (that lets you replay the levels with different dragons, weapons and dificulties) made replaying the game a blast.
So, basically, PDZ convinced me of how great both arcade games and 3d games could be, and even introduced me to more serious, tragic stories in video games. Because of the sense of scale, the well-crafted world and tragic story, I like to think of it as "Shadow of the Colossus" years before SotC. It's a shame that it never got to be as recognized as SotC.

It is really hard indeed, maybe Daytona USA, F1 Challenge, or Sega Rally Championship. International Victory Goal, and Worldwide Soccer were very good as well. That machine is perfection when it comes to game genres.

It's really hard to pick one, but that's what makes you think; What is the definitive game on the system? And it seems like stratogustav and mannyrodz didn't get the memo since they both answered several games again.

I hate to admit, but I used the infinite lives code to beat Shinobi Legions. I kept dying at that level with the goddamn boats (the double jump is kinda unreliable) and the boss right after it. Having to go through all the previous levels again and again was just too much.

You can always retry, it is a pain when you lose because of the heavy investment, I guess that's how most games used to be, maybe that's why I like From Software stuff nowadays, but I would say it is mostly because of their themes.
