Does anyone would know how to walk me through...

I don't know if this is recent enough but I just searched up japanese psn guide and this was the first page: www.psnstores.com/2013/01/how-to-navigate-the-new-japanese-playstation-store/

The first entry parameter is your last name, the second is your given. In Japan, the family name precedes the given name.
The last is your sex (optional). 男- Male　女 - Female

The 3 tabs below are Cancel, Previous/Return, and Next in that order.
With O=Previous/Return, and X=Confirm

If you want the input of your name in Katakana, I can show you how your name can be written.
But you'll have to give me your real name for me to do it...  

If you manage to get past that, Just tell me what game you want and I will give you the Japanese title equavelant here.

Gustavo Avilés = グスタヴォー・アビレス　
(I'm assuming your last name is pronounced 'Avi'-'less'. If it's 'Avi'-'leigh', swap the アビレス with アビレイ）

So you want アビレス (or アビレイ) in the top parameter, and グスタヴォー in the second.
But if it allows entry for your name in the regular alphabet, I'd just stick with that.
Get back to me if there are more parameters to fill after that initial screen.

Addendum:
Your last name could also be written as アヴィレス (or アヴィレイ).
Maybe this version is a little closer to the real pronounciation. But it's ultimately inconsequential.

That's Hiragana. You want to change it to Katakana. Akin to switching from lower case to caps in the Roman alphabet.

P.S If you haven't entered your name yet for the initial screen, and you still want to enter it in Katakana instead of ABCs, it might be better to use アヴィレス instead of アビレス like I initially said.
So your full name would be グスタヴォー・アヴィレス
But remember that アヴィレスbeing your last name comes first in the top parameter when entering it.

That's what I was afraid of. You're going to need a Japanese address to join.

What you can do is sign up for a storage suite with a forwarding service like Tenso
I believe there might be an initial sign up fee, but you can then keep that address forever.
Plus you can then order from places like Amazon.co.jp if you're so inclined.

There isn't any uppercase or lowercase as we think of them in Japanese actually.
Hiragana is mainly used for the native Japanese sentence grammar construction, while Katakana is mainly for foreign/Western derived nouns. That's why the majority of Japanese titles are written in Katakana, just as your own name would be.

To make it a little easier for you to input the characters, these are how the characters sound as listed on the display as per top row down.

都道府県 = Perfecture
市区町村 = City
住所と番地 = Address
