Kind of like Mark...but for Hamburgers

I've been enjoying a lot of videos by George Motz (aka The Burger Scholar) lately.
He reminds me a lot of Mark, in that he has a background as a documentary film maker, a ton of charisma and easy camera presence, and an impressive knowledge of his subject matter of choice (in this case, the hamburger). Also, he kind of looks like a middle-aged, jolly Wolverine.
He's made some films, shows and written a few books over the years. Worth hunting down if you enjoy the subject matter.
This method of using thinly shaved onions on a smash burger has become a favourite of mine (though I use a mandolin instead of a deli slicer):
He's been doing a series for the last year or so for "First We Feast" called "The Burger Scholar Sessions" about interesting regional burger styles that is well worth a watch. One of those cases where it is just enjoyable to watch an engaging person who's very knowledgeable about a subject, and able to enthuse about it endlessly in an interesting way.
